Second Fermentation

 
In this second alcoholic fermentation in bottles, which will last between six and eight weeks, the yeast will release alcohol and carbon dioxide, and the clear wines will become effervescent

 
Maturing on the lees will last a minimum of twelve months during which time the lees, composed essentially of the yeast that has grown in the bottles, will form a deposit.
