Disgorging and Dosage

 In order to eliminate the deposit concentrated in the bottle, the neck of the bottle is plunged into a solution at -25°C to form a block of ice containing the sediments. The natural pressure contained in the bottle will then eject this deposit when the cap is withdrawn.
A liqueur de dosage or liqueur d’expédition is then added, determining whether the Champagne will be: 
Extra Brut: 0 to 6g/litre

 
Brut: 6 to 12g/litre
Extra Dry: 12 to 17g/litre
Sec: 17 to 32 g/litre
Demi-Sec: 33 to 55g/litre
Doux: over 50g/litre
JACQUART wines have low dosage levels (10g/L for the Brut Mosaïque).
